ITC Grand Chola is a vast hotel on Mount Road in Guindy, built in the style of a Chola temple, with carved granite pillars, courtyards and a gopuram-like tower. It is one of the largest hotels in India, and one of the greenest, certified LEED Platinum. Behind the scale it is a serious address for food: Peshawri for the north-west frontier grill, Royal Vega for a vegetarian tasting menu drawn from across India, and Avartana for a modern southern one. The rooms are large and quiet, with deep bathtubs and city views. There is a long outdoor pool, a spa, and a club floor. It is a fifteen-minute drive from the airport and a good first and last night in the south.

Visalam is a 1930s Chettiar mansion in Kanadukathan village, built by the MSMM family for a daughter, Visalakshi, and named after her. It is a long Art Deco house around a pillared courtyard, with fifteen large rooms, terrazzo floors and period furniture. CGH Earth runs it lightly: a pool in the garden, bicycles for the village lanes, and cooking sessions in the open kitchen. Meals are Chettinad home food, served on the veranda. The staff walk guests through the neighbouring mansions and the Athangudi tile workshops. A night here is the best way to understand Chettinad.

Heritage Madurai occupies the old Madurai Club grounds, a walled garden designed by the Sri Lankan architect Geoffrey Bawa. It keeps Bawa's low pavilions and water courts, and adds villas with private plunge pools among the trees. The main pool is long and quiet. There is a spa, and the restaurants cover Madurai street food as well as the usual range. It is a ten-minute drive from the Meenakshi temple, but it feels well out of the city, which after a day in the old town is the point. It is the most comfortable base in Madurai by a distance.

Temple Bay is a beach resort on the East Coast Road, a short walk from the Shore Temple. Its centrepiece is one of the longest swimming pools in India, running most of the length of the grounds toward the sea. Guests stay in rooms in the main block or in private cottages and villas scattered through the garden, some with plunge pools. The beach here is wide and largely empty, watched by lifeguards. There is a spa, a kids' club, and several restaurants, including one on the sand. It is the comfortable base for the monuments, and an easy weekend distance from Chennai.

The Savoy is among the oldest hotels in South India, open since 1829, on a rise above the racecourse in the middle of Ooty. The rooms are in single-storey tiled cottages around a long lawn, each with a sitting room and a working fireplace that the staff light in the evening. There is a croquet lawn, an old bar, and a garden that has been kept for nearly two centuries. It is a short walk to the lake and the botanical garden. It is run by the Taj group now, and it holds its Raj-era character without trying too hard. It is the place to stay in Ooty for the sense of the hill station.

Palais de Mahe is a colonial-style mansion in the heart of White Town, run by the CGH Earth group. It was built new in the old manner, around a courtyard, with tall shuttered windows, antique furniture and a small rooftop pool that looks over the tiled roofs toward the sea. There are eighteen rooms. The restaurant does Creole and French-Tamil food, and the kitchen leans on the group's habit of local, seasonal cooking. The promenade and the ashram are a few minutes' walk away. It is the quiet, characterful choice in the French quarter.

Svatma is a heritage and wellness hotel a few minutes from the Brihadeeswarar Temple. It joins a restored 1942 family house to a newer wing built in the same spirit, with pillared verandas, a temple tank-style pool and courtyards. The food is sattvic and vegetarian, cooked without onion or garlic, and there is a live Carnatic music recital most evenings. There is a full Ayurveda centre, a yoga hall, and a shop of Tanjore crafts. The service is warm and personal. It is comfortably the finest stay in the delta, and it turns a temple stop into a restful night or two.
